sweet and sour chicken

Ingredients

  • pound boneless chicken breast cubed
  • 1 16 oz can pineapple chunks

Sweet and Sour Mixture

  • 1 cucumber remove seeds
  • 2 sticks celery
  • 1 green pepper
  • 1 carrot stick
  • 1 cup cider vinegar
  • cup water
  • 1 cup sugar
  • ½ cup catsup
  • 4 tablespoons corn starch
  • 1 tablespoon dark soy sauce

Chicken Marinade

  • 2 tablespoons dark soy sauce
  • 1 teaspoon dry sherry
  • ½ teaspoon salt
  • ¼ teaspoon sugar
  • Dash of pepper

Batter

  • 1 cup self-rising flour
  • 2 tablespoons corn starch
  • cups water

Dry Mixture

  • 1 cup self-rising flour
  • 2 tablespoons corn starch

Instructions

  • Cut cucumber, celery, green pepper, and carrot into chunks.
  • Soak vegetables in cider vinegar, water, and sugar for at least two hours.
  • Drain pineapple chunks and use the juice and above mixture to make gravy.
  • Add catsup, corn starch (mixed with a little water), and soy sauce to gravy.
  • Marinate the chicken for 20 minutes in soy sauce, sherry, salt, sugar, and pepper.
  • Dip cubed chicken first into the batter, then into the dry mixture.
  • Using 1/2 inch of oil in pan or wok, deep fry chicken for about 10 minutes.
  • Drain on paper towels.
  • Heat pineapple chunks and vegetables in pan or wok.
  • Serve with rice.

Potato Salad

Potato Salad

Ingredients

  • 1 teaspoonful Worcester Salt
  • 6 potatoes
  • 2 medium-sized onions
  • 1 egg Well beaten
  • ½ tablespoon flour
  • ½ tablespoon butter
  • ¼ cup weak vinegar
  • 1 teaspoonful sugar
  • Pinch cayenne pepper
  • teaspoonful mustard

Instructions

  • Pare and boil potatoes adding Worcester Salt to the water.
  • When done slice the potatoes and mix with sliced onions.
  • For dressing mix other ingredients well, season with Worcester Salt, let come to a boil and when cool mix with salad.

Ingredients

  • 3 lbs. round ground
  • 1 box lasagna noodles
  • 3 cans Suzabelle Pizza sauce
  • 1 can can stewing tomatoes finely cut
  • 1 large onion
  • 2 pkg Mozzarella cheese
  • 2 cartons cartons ricotta cheese
  • 2 tsp. rounded oregano
  • Parmesan cheese

Instructions

  • Cook meat in oil with onion.
  • While meat is browning, open cans and combine in a large kettle.
  • Add meat and simmer for 30 minutes,
  • Cook lasagna noodles. Into the very large roasting pan, put 1 cup of sauce on the bottom.
  • Add lasagna strips, then the mixture, then 2 kinds of cheese.
  • Keep repeating.
  • The top layer has the mixture and cheese on top.
  • Sprinkle Parmesan cheese on top and a very faint sprinkle of oregano.
  • Bake in 350-degree oven 30- 40 minutes.
  • Let set for about 10 minutes before serving.

Ingredients

Sift

  • 1 cup flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup sugar

Stir in about

  • 6 tablespoons milk
  • tablespoons melted butter
  • 1 teaspoon vanilla
  • 1 cup chopped nuts
  • 1 cup light brown sugar

Topping

  • 4 tablespoons cocoa
  • cup hot Water

Instructions

  • Spread batter in a well-buttered square pan.
  • Mix 1 cup light brown sugar with 4 tablespoons cocoa.
  • Spread over batter, over this pour 1 3/4 cup hot water, and bake at 350° about 45 minutes.
  • Serve with Whipped cream or plain.

Ingredients

  • lb ground chuck
  • cup chopped onion
  • 1 tbsp shortening
  • tsp salt
  • tsp chili powder
  • 2 tbsp flour
  • 1 cup water
  • 2 tbsp Worcestershire sauce
  • cup Tomato ketchup
  • ¼ tsp pepper

Instructions

  • Saute beef and onions in shortening,
  • Add seasonings and flour, stirring until blended
  • Add remaining ingredients and simmer until mixture thickens- about 30 minutes
