Moon Crescents (Gurabije)

Ingredients

Cookie

  • 1 cup lard
  • 1 cup sugar
  • 3 cups flour
  • 4 egg yolks
  • 1/2 tsp lemon extract
  • 1/2 lemon juice from 1/2 lemon

Optional toppings (see instructions below)

  • 1-2 egg whites
  • chopped nuts
  • 1/2 cup white sugar
  • 2 tsp cornstarch

Instructions

Cookies

  • Cream lard and sugar until light and fluffy; add egg yolks and blend in.
  • Add lemon extract and juice and then blend in the flour, mixing well.
  • Roll dough out on floured board to about 1/2" thickness. Cut with cookie cutter into quarter moon shapes.
  • Bake on ungreased pan at 325 degrees for 25 minutes.

Optional Toppings

  • Prior to baking, tops of cookies can be brushed with egg whites (unbeaten) and sprinkled with chopped nuts.
  • For a more decorative cookie, beat until stiff 2 egg whites to which 1/2 cup sugar and 2 teaspoons cornstarch have been added. Beat until very stiff, put meringue into pastry bag and with a rosette ti, pipe meringue across center of cookie. Bake as directed.

COCONUT MACAROONS

Ingredients

  • 3 egg whites stiffly beaten
  • 1 cup white sugar
  • 1 dessert spoon cornstarch
  • 1/2 lb coconut

Instructions

  • Cook in double boiler 5 mins. stirring constantly. Add coconut to thicken (about 1/2 lb.) and drop by spoonful on well buttered pan. If egg whites are large, add more coconut. 
  • Bake at 300° until light brown.

Bangor Brownies

Ingredients

  • 1/4 cup shortening melted
  • 1 cup molasses
  • 2 squares bitter chocolate melted
  • 1 cup flour
  • 1 teaspoon baking powder
  • touch salt
  • 1 cup nuts (optional)

Instructions

  • Sift flour, baking powder and salt together
  • Mix the ingredients in the order given and beat thoroughly
  • Spread the mixture evenly on a cake pan that has been lined with oiled paper.
  • Bake about 15 minutes in a pre-heated slow oven 350°F
  • Remove the paper from the cake as soon as it is taken from the oven and cut into small squares or strips with a sharp knife

Wheaties-Coconut Cookies

Ingredients

  • 1 cup mixed butter & other shortening
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs beaten
  • 2 cup coconut
  • 2-2 1/2 cup flour
  • 1/2 tsp baking soda sifted
  • 1/2 tsp vanilla
  • 2 cup Wheaties

Instructions

  • Blend shortening, salt and sugars.
  • Mix in eggs.
  • Stir in coconut.
  • Sift together flour, soda, baking powder, and salt and add to mixture.
  • Blend in vanilla and Wheaties.
  • Roll into balls the size of walnuts.
  • Bake 12 minutes at 400°

Viennese Nut Cookies- Nussbusserl

Ingredients

  • 2 egg whites whipped
  • 1/2 cup sugar
  • 1 cup nuts finely ground, almond or filbert
  • dash instant coffee powder

Instructions

  • First Mix with Spoon, then work with hands.
  • Form small balls and place on a slightly greased baking sheet, bake at 250° for about 20 minutes
  • Optional- before baking press half an almond in the middle.
