I was trying to find something (anything) about this recipe fpr a Hawaiian Party Cake and there isn’t that much out there. I can find all sorts of cake decorating tips and tricks but only two websites with this style of cake. Is it authentic? Doubtful. I have a feeling that it came about as part of the Hawaii is an exotic place so add some pineapples. (Fun fact- most pineapples now come out of the Philippines, not Hawaii).
Hawaii Party Cake

1 yellow or lemon cake mix plus ingredients listed on package 1 pkg vanilla instant pudding 1 cup milk 8 oz soft cream cheese 2½ cup crushed pineapple coconut shredded or flaked chopped nuts maraschino cherry bits
Make & bake cake mix as directed on package.
Cool.
Beat together instant pudding with milk and cream cheese.
Spread this mixture on the cooled cake.
Drain liquid from the crushed pineapple and spread evenly over the pudding mixture.
Sprinkle with coconut, chopped nuts, and cherries.
Refrigerate.
COOKIES FROM CAKE MIX

1 2-layer cake mix, any flavor ½ cup cooking oil 1 tablespoon water or milk 2 eggs chopped nuts, coconut or raisins optional
Add oil, water and eggs to half the cake mix; blend well.

Add remaining cake mix; blend well.

Drop by teaspoons onto greased cookie sheets and bake in 375° oven 10 to 15 minutes.
Add chopped nuts, coconut or raisins to the batter if you wish

Cherry-Raisin Loaf

2 cups all-purpose flour sifted ½ cup sugar pinch salt ½ tsp baking soda 1 tsp baking powder ½ cup butter ½ cup seedless raisins 1 cup maraschino cherries coarsely cut 2 egg yolks beaten ½ cup buttermilk
Combine dry ingredients.
Cut in butter as for pastry.
Add fruit, mixing throughly.
Add egg yolks.
Slowly add buttermilk, mixing to form a stiff batter.
Pour into butter 8"x4½"x2½" loaf pan.
Bake in preheated 350° oven for 45 minutes or until a toothpick inserted into center comes out clean and loaf begins to pull away from sides of pan.
Cool 15 minutes in pan; turn out onto wire rack
I have to admit something- despite owning two Instant Pots I have never made Instant Pot Cheesecake. Now this vintage recipe does not use a pressure cooker but it also does not use Cream Cheese- instead, it uses cottage cheese and evaporated milk. I’m actually tempted to make this but with Lent starting tomorrow and not going anywhere for the foreseeable future (thanks Covid) I’m not going to try it. Anyone out there up for the challenge?
40 Minute Cheesecake

1 cup sugar 1 lb. cottage cheese 2 eggs 6 oz evaporated milk 1 tsp salt 2 tsp vanilla
Mix all ingredients in electric blender until fine.
Pour into greased pan and bake in 350° oven for 40 minutes, placing pan into a pan of water when baking.
Check with toothpick to test doneness.
