Fastnacht Keuchels

Yes! A break from all the Pączki recipes I’ve been posting! I’ve gone over the border to Germany to Fastnacht Keuchels- which are also doughnuts made to be eaten just before Lent.

Fastnacht Keuchels

Ingredients

  • 5 cups flour
  • 1 pkg yeast
  • 1 tbsp salt
  • 4 tbsp sugar
  • 3 eggs
  • 3 tbsp butter
  • 2 cups milk
  • fat or oil for frying
  • powdered sugar

Instructions

  • Put flour in large bowl and let stand until room temperature. 
  • Make a well in the center of the flour.
  • Soften yeast and 1/2 tsp sugar in 5 tbsp warm milk and pour into the flour well.
  • Let rise until foamy and light, then add the remaining warm milk, eggs, salt, sugar and melted butter.
  • Work ingredients to a dough and knead thoroughly.
  • Cover and let rise in a warm place until light.
  • Turn onto floured board and roll to approximate 1/2" thickness.
  • Cut into rounds or squares.
  • Cover and let stand about 1 hour.
  • Place raised side down into hot fat.
  • Fry until well browned then turn and fry the second side.
  • Drain well and dust with powdered sugar.

Ingredients

  • 1 Cake Yeast
  • 2 Cups Warm water
  • 4 Cups Milk Scaled and cooled to lukewarm
  • 2 Eggs
  • 1 Tsp Salt
  • 1 Cup Shortening
  • 1 Cup Butter
  • Flour (See recipe)

Instructions

  • Sprinkle yeast into warm water. Cover and let stand for 5 minutes.
  • Scald milk
  • Beat Eggs well
  • Add eggs and salt to lukewarm milk, Add the yeast mixture.
  • Beat in enough flour to create a sponge.
  • Cover and let rise in warm, drafts free place until light- about 1-1/2 hours.
  • When light, add room temperature shortening and butter and add enough flour to make smooth elastic dough. Knead well.
  • Cover and let rise until doubled in bulk, punch down and allow to rise again.
  • Punch down and make into buns.
  • Place on greased cookie sheet.
  • After cookie sheet is full, make somewhat smaller balls and put those on first buns.
  • Put thumb in center to hold balls together.
  • Let rise until light.
  • Bake in 375 degree overn for 20-25 minutes

Notes

Zwiebeck was always served with coffee to Sunday visitors. Butter was never served with the buns as the butter was already baked into the buns.

Armella’s Kuchen recipe

This recipe came from my grandmother cousin Armella. I did leave out Armella’s secret ingredient- which would be tobacco smoke. Both Armella and her husband were chain smokers and I still remember the cloud of smoke that hung in the air. Ahh the 70s when a little second hand smoke was OK.

Ingredients

Main Kuchen dough

  • 1 cup milk scaled
  • 1/4 cup shortening (half crisco, half butter)
  • 1 tsp salt
  • 1/2 cup sugar
  • 2 eggs
  • 1 yeast cake
  • 3 1/2 cups flour
  • 1 cup warm water

Topping

  • 1/2 Cup butter
  • 1/2 cup brown sugar
  • 1 cup flour

Instructions

  • scald milk, add shortening, sugar and salt, when cooled add eggs
  • Dissolve yeast in warm water, add 2 tablespoon sugar
  • Let rise a little bit, when milk mixture cooled combine yeast mixture and milk mixture
  • Add eggs and flour, mix 
  • Let flour rise until doubled in bulk
  • Punch dough down and knead on floured board, set in 2 or 3 greased pans- let rise again.
  • Mix topping together and sprinkle on the risen mixture
  • Bake at 350º for 25 minutes

German Lebkuchen Cookies

Ingredients

  • 4 cup honey
  • 1/4 cup butter
  • 2 eggs beaten
  • 1/2 tsp cloves
  • 1/2 tsp nutmeg
  • 4 cups flour
  • 1 cup brown sugar
  • 3 tsp vinegar
  • 1 Tbsp soda
  • 1 tsp cinnamon
  • 1 cup nuts chopped

Instructions

  • In a large pan heat sugar, butter and honey until hot (do not boil).
  • Remove from heat and add spices and soda dissolved in 3 tsp vinegar.
  • Stir well and cool.
  • Add beaten eggs, flour and nuts.
  • Place in a greased bowl and place in refrigerator.
  • Cool for at least 2 or 3 days.
  • Roll on floured board 1/8″ thick & cut out.
  • Bake at 350 deg oven for 12-15 minutes.
  • Remove from sheet at once and cool.
  • Frost with a thin powdered sugar icing (colors optional).

Peppernuts (Pfeffernüsse)

Peppernuts (Pfeffernüsse) are spicy cookies that are very hard when they are cooled. Store in tightly covered containers with a piece of apple.

Ingredients

  • 1/2 cup almonds blanched
  • 4 cups flour sifted
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cloves
  • 1/4 teaspoon mace
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 oz candied citron
  • 4 eggs
  • 2 cups sugar
  • 2 1/4 teaspoon brandy

Instructions

  • Grease Cookie sheets
  • Grate 1/2 cup (2 1/2 oz) blanched almonds
  • Sift together into a bowl the flour, cinnamon, nutmeg, allspice, cloves, mace, salt & pepper. Stir in the almonds and set aside.
  • Chop and set aside the 3 oz. candied citron.
  • Beat until thick and piled softly 4 eggs.
  • Add gradually, beating thoroughly after each additon 2 cups of sugar.
  • Add the flour-almond mixture into fourths, blending thoroughly after each addition. Mix in the citron. Turn about on half the dough onto a lightly floured surface and roll 1/2" thick. Cut with a lightly floured 1" round cookie cutter. Transfer to cookie sheets.
  • Put a drop of brandy on the center of each cookie.
  • Bake at 350°F for 15 to 20 minutes or until cookies are lightly browned.
  • Remove to cooling racks, cool & store.

Notes

Makes about 11 dozen cookies.
