Canadian Cheese Soup “Meet the Millers” December 29, 1960
Canadian Cheese Soup
Originally from WBEN-TV's "Meet the Millers" TV show and the Iroquois Gas Corporation Home Service
Ingredients
- 3 tbsp minced onion
- 3 tbsp grated carrot
- 3 tbsp butter
- 4 cups chicken broth
- 1/2 tsp dry mustard
- 1/2 tsp paprika
- 1/2 tsp salt
- 2 tbsp cornstarch
- 1/4 cup milk
- 1/4 lb cheddar cheese
- 2 tbsp minced parsley
- 1 cup beer (optional)
Instructions
- Cook onion and carrot in butter 10 minutes, stirring occasionally.
- Add broth, mustard, and paprika.
- Cook over low heat 15 minutes.
- Mix together cornstarch and milk, stir into soup.
- Cook 5 minutes.
- Add cheese and beer, stirring over low heat until cheese melts.
- Taste for seasoning (salt & pepper).
- Sprinkle with minced parsley.

Shortbread Cookies
Ingredients
- 1/2 pound butter
- 1/2 cup sugar
- 2 tbsp sugar
- 2 1/2 cup flour sifted
- dash salt
- sugar (for sprinkling)
Instructions
- Mix the first four ingredients (Butter, sugar, flour, salt)
- Roll out to 1/3" to 1/2" thickness.
- Cut with square cookie cutter; sprinkle tops with sugar and prick with a fork,
- Bake on ungreased cookie sheets at 300º F for 20-25 minutes.
- Cookies will dry out but not brown.

Lemon Squares (aka L’emon Squares)
Lemon Squares
Servings: 3 dozen
Ingredients
Bottom Layer
- 1 cup flour sifted
- 1/4 cup confectioners’ sugar
- 1/2 cup butter
Top Layer
- 1 cup sugar
- 2 tbsp flour
- 1/2 tsp baking powder
- 2 eggs slightly beaten
- 3 tbsp lemon juice
- 3 tbsp confectioners’ sugar
Instructions
Bottom Layer
- Mix together flour and confectioners’ sugar.
- Cut in butter, as for pastry, until mixture resembles a coarse meal. Mix well.
- Pat into a 9″x9″x2″ pan.
- Bake at 350º for 15 minutes.
Top Layer
- Combine all ingredients except confectioners sugar and pour over baked bottom layer.
- Bake at 350º for 25 minutes.
- While warm sprinkle top with confectioners’ sugar and cut into 1 1/2″ squares.
