Old Fashioned Gingerbread

Gingerbread
- 1/2 cup sugar
- 1/2 cup shortening
- 1 egg
- 1 cup molasses
- 2 1/2 cups flour sifted
- 1 1/2 tsp soda
- 1/2 tsp cinnamon
- 1/2 tsp ground cloves
- 1 tsp ground ginger
- 1/2 tsp salt
- 1 cup hot water
Caramel Sauce
- 1 cup light corn syrup
- 2 cups dark brown sugar
- 8 ounces butter
- 1/2 cup bourbon
- 1 cup cream
Gingerbread
Preheat oven to 325º, Not necessary to grease and flour pan.
Cream shortening and sugar
Add egg, molasses and beat well.
Add sifted dry ingredients and then hot water.
Beat until smooth.
Pour into baking pan and bake for 25-30 minutes.
Serve warm with whipped cream or Caramel Sauce
Caramel Sauce
Boil together corn syrup, sugar and butter until mixture is the consistency of thick cream.
Remove from heat and cool.
Add the cream and bourbon.

Mincemeat Filled Cookies

- 1 1/2 cups shortening
- 3/4 cup brown sugar
- 3/4 cup sugar
- 1 egg
- 4 1/2 tbsp milk
- 1 1/2 tsp vanilla
- 4 1/2 cups all-purpose flour sifted
- 3/4 tsp salt
- 3/4 tsp soda
- 1 can mincemeat pie filling
- 1/2 cup orange marmalade
Cream shortening and sugars together until fluffy.
Add egg, milk and vanilla; beat well
Sift dry ingredients together; add to creamed mixture and mix well.
Wrap dough in waxed paper and chill well.
Roll one forth of a dough at a time on a floured surface to 1/8" thickness.
Cut with a 2 1/2" round cutter.
Place cookies 1" apart on an ungreased cookie sheet.
Combine pie filling and marmalade; place 1 tablespoon of mixture on each cookie.
Roll one fourth of the dough as previous. Cut with 2 1/2" cutter and cut a small hole in center of each cookie with a small cutter.
Place over filling, centering hole; seal edges by pressing with a fork.
Bake in a moderately hot oven (375º F) 10-12 minutes.
Repeat with remaining dough and filling.
Makes 4 1/2 dozen cookies.

Butter Cookies
- 1 cup butter
- 2 eggs
- 2/3 cup sugar
- 2 1/2 cups flour
- 1 teaspoon flavoring
Cream butter, add sugar, beat eggs until foamy and add with flavoring to mixture.
Beat in sifted flour and mix well.
Chill very thoroughly and put through a cookie press
Bake 12-15 minutes at 375 degrees F.

Bangor Brownies

- 1/4 cup shortening melted
- 1 cup molasses
- 2 squares bitter chocolate melted
- 1 cup flour
- 1 teaspoon baking powder
- touch salt
- 1 cup nuts (optional)
Sift flour, baking powder and salt together
Mix the ingredients in the order given and beat thoroughly
Spread the mixture evenly on a cake pan that has been lined with oiled paper.
Bake about 15 minutes in a pre-heated slow oven 350°F
Remove the paper from the cake as soon as it is taken from the oven and cut into small squares or strips with a sharp knife

- 2 egg whites whipped
- 1/2 cup sugar
- 1 cup nuts finely ground, almond or filbert
- dash instant coffee powder
First Mix with Spoon, then work with hands.
Form small balls and place on a slightly greased baking sheet, bake at 250° for about 20 minutes
Optional- before baking press half an almond in the middle.
