Bourbon Rings

2 1/2 cups flour 1 cup butter 1/2 cup sugar 2 tbsp bourbon
Combine all ingredients and work together to make a soft dough. Roll into thin ropes on a lightly floured surface.
Cut into 4" lengths. Carefully twist 2 lengths together, shape into a ring by pinching the ends together.
Bake on greased cook sheets in preheated 350º oven 12-15 minutes, until done and lightly browned,

While going through recipes last night I came across this one and knew I had to try it. I did make a few changes (I am not a fan of nuts or raisins) so I left those out. These do become hard cookies but resemble the Italian biscotti.
Cinnamon Cuts Krajanki Cynamonwe

3 cups flour 3 eggs 1 1/2 cups sugar 1/2 cup nut meats 1 tsp baking soda 1 tbsp water 1 tsp cinnamon 2 tbsp butter
Cream butter, sugar, and eggs.
Dissolve baking soda in water and add to creamed mixture.
Add cinnamon and flour. Mix well.
Add raisins and nutmeats and mix well.
Roll into long strips about 1" thick and flatten to about 2" in width.
Bake in a 350-degree oven for about 25 minutes.
Remove from oven, slice diagonally and return to over for 15 more minutes.
These keep indefinitely.

Butter Rings

1 cup butter 1 cup sugar 1 egg separated 2 cups flour sifted cake 4 tbsp sugar candied cherry bits red and green
Cream butter and 1 cup sugar until light.
Add egg yolks and mix well.
Stir in flour; mix to a stiff dough.
Pinch off about 1 tablespoon dough.
Roll between the palms of hands to a size of a cigarette.
Join ends to make a ring.
Place 2 inches apart on greased cookie sheet.
Brush cookies lightly with unbeaten egg white.
Sprinkle with remaining 4 tablespoons sugar.
Bake in a preheated 375º F oven for about 10 minutes.
Decorate with green and red candied cherry bits while warm.

Anise Cookies

4 eggs 1 1/2 cups sugar 2 cups flour all purpose 1 tsp baking powder 3 1/2 tsp anise seed
Beat eggs in a mixing bowl until light and frothy.
Add sugar gradually, beating continuously until mixture is lemon colored.
Sift flour, baking powder, and anise seeds together and add gradually to the egg mixture, beating well after each addition.
Heat oven to moderate 350º F.
Grease baking sheet and dust with flour.
Drop cookie dough from a teaspoon onto the prepared cookie sheet.
Bake 10-15 minutes

2 eggs 1 cup sugar 1/2 tsp salt 1 tsp vanilla 2 cups flour 1 1/2 tbsp anise seed crushed
Beat eggs until thick.
Gradually add sugar, continuing to beat until very thick.
Fold in flavoring and flour gradually.
Add anise seed.
Drop onto lightly greased cookie sheets.
Let stand for 12 hours until hard crust forms on top of cookies.
Bake in pre-heated oven at 350º F for about 10 minutes.
Cookies will be light colored with tops puffed up to resemble icing.
Store i tightly covered container.
Yields approx 3 dozen cookies.
