Swedish Rye Bread

 

Swedish Beer Rye Bread (Vort Limpa)

Ingredients

  • 1 ¾ cups beer
  • ½ cup warmed molasses
  • 2 cakes yeast dissolved in 1/4 cup warm water
  • cup butter
  • 2 tsp salt
  • 3 cups rye meal or flour
  • 3 cups white flour
  • 1 tbsp caraway seed

Instructions

  • Combine beer and molasses and add the dissolved yeast.
  • Beat in the rest of the ingredients and blend well.
  • Brush the top of the dough with softened or melted butter, cover, and let rise until doubled.
  • Then punch the dough down, turn it out onto a floured board, and knead until thoroughly, about 7 to 8 minutes, using as much more white flour as is necessary to keep the dough from sticking.
  • Shape into 2 loaves and place in buttered 8- by 4-inch loaf pans; or shape into 2 oval loaves and place on buttered cookie sheets,
  • Cover and let rise until doubled.
  • Bake in a 350 oven for 35 to 45 minutes, or until done.

GUINNESS CAKE

Ingredients

  • ½ lb. butter
  • ½ lb. brown sugar
  • 4 eggs
  • 10 oz. flour
  • ½ lb. seedless raisins
  • 2 tsp. allspice
  • 4 oz. mixed peel
  • 4 oz. walnuts chopped
  • 4 oz. cherries chopped
  • 1 pint Guinness

Instructions

  • Cream the butter and the sugar together until light and creamy.
  • Gradually beat in the eggs.
  • Fold in the flour and allspice.
  • Add the raisins, mixed peel, cherries and walnuts.
  • Mix well together.
  • Stir 4 tablespoons Guinness into the mixture and mix well.
  • Turn into a prepared 7 inch round cake tin and bake at 325° for 1 hour.
  • Then reduce heat to 300° and cook for another 1 ½ hours.
  • Allow to cool.
  • Remove from tin.
  • Prick the base of the cake with a skewer and spoon over the remainder of the Guinness.

Ingredients

  • 12 oz beer room temperature
  • 3 cups Bisquicktm
  • 1 tbsp sugar

Instructions

  • Heat oven to 350°.
  • Mix ingredients in a large bowl.
  • Fill greased muffin tin ½ full.
  • Bake 25 minutes

Ingredients

  • 2 cup Bisquick Mix
  • 1/4 cup onions finely chopped
  • 1/2 - 2/3 cup beer freshly opened
  • 1/2 cup cheddar cheese grated

Instructions

  • Preheat oven to 450º.
  • In a large bowl, combine all ingredients and stir with a fork until sticky ball forms.
  • Turn out on well-floured board.
  • Knead 8-10 times, then pat or roll into a 1/2" thick square.
  • Cut into 16 pieces, place on a lightly floured greased sheet.
  • Bake 10-12 minutes until browned.
