Mock Lasagna

Ingredients

  • 1 lb ground beef
  • 1 15oz can tomato sauce
  • 1/2 tsp garlic salt
  • 1/2 tsp dried basil leaves
  • 1/2 tsp pepper
  • 1/2 cup water
  • 1 1/2 cup cream-style cottage cheese
  • 6 oz velveeta shredded
  • 1 1/2 cup macaroni cooked

Instructions

  • Brown ground beef and drain.
  • Add to beef the tomato sauce, garlic salt, pepper basil and 1/2 cup water
  • Cover and simmer 15 minutes.
  • In 2-quart casserole, layer half the macaroni, cottage cheese, shredded cheese, and sauce. Repeat.
  • Bake, uncovered in a 375º oven for 30 minutes.

Ingredients

  • 1 cup celery
  • Dash Worcestershire
  • 1 quart V-8 juice
  • Dash Tabasco
  • 1 cup sugar
  • 3 packages plain Knox gelatin
  • 1 large onion
  • ¼ cup vinegar
  • cup lemon juice
  • 1 Tablespoon horseradish

Instructions

  • Simmer all of the above except gelatin, vinegar and horseradish for 30 minutes.
  • Strain and cool.
  • Dissolve 3 packages plain knox gelatin in mixture.
  • Stir in ¼ cup vinegar, 1 tablespoon horseradish.

Notes

Optional- ¾ cup cottage cheese, shrimp, avocado pear, chopped celery or whatever you like.

Hamburger Pie

I really try to not editorialize the recipes I find- but there are things that make me go WTF/ simple dog head tilt. There are a lot in this Betty Crocker collection & of course I will have to post many of them. Because I am evil like that.
Let us just say the early 70s were not a good time for food & food photography. I blame the drugs of the late 1960s. Of which there was a lot of. (I’m still not sure what the explanation for some of the food choices of the 1950s were…)

HAMBURGER PIE

  • 1 pound ground beef
  • 1 tablespoon instant minced onion
  • Potato Buds instant puffs (instant potatoes)- enough for 8 servings
  • ¼ cup catsup
  • 1 egg
  • 1 cup milk
  • 1 teaspoon salt
  • ½ cup shredded sharp Cheddar Cheese (2 oz)
  • 1/8 teaspoon pepper

Heat oven to 350°. Mix meat, 1 1/3 cups of the instant puffs (dry), the egg, salt, pepper, catsup, onion and milk. Spread into ungreased pie pan, 9×1½ inches. Bake uncovered 35 to 40 minutes.

Prepare remaining instant puffs as directed on package for 4 servings. Top baked meat loaf with mashed potatoes, sprinkle with cheese. Bake 3 to 4 minutes longer or until cheese melts.

4 to 5 servings.
