GOLDEN RICE BOWL

1 cup rice 4 tablespoons melted butter 1½ tablespoons lime juice 1 cup celery sliced, 1 can mandarin orange segments drained 1 green onion sliced ½ cup mayonnaise
Cook rice; following» label directions.
Sprinkle melted butter and lime juice over; toss lightly with a fork; cool to room temperature.
Fold in celery, mandarin orange segments, green onion, and mayonnaise.
Serve as is- no need to heat or chill

1 cup uncooked rice 4 tablespoons butter 1 large onion sliced 2 cups stock, broth or bullion
Wash rice.
Brown sliced onion lightly in butter.
(We used green pepper and mushrooms too)
Add rice
Cook over low heat for about 4 or 5 minutes, stirring often so it will brown evenly.
It should be just lightly colored.
Heat liquid to boiling; pour over the rice until it is 1 1/2 inches above.
Cover pan tightly and bake in 350 oven for 25-30 minutes, or until all liquid is absorbed.
Serve with plenty of butter.
This also can be cooked on top of the stove over very low heat.

Brown rice in oil; add onion; let it brown a little; add tomato and the rest of the ingredients; lower heat and cover
Cook for about 30 minutes.
(Garnish with peas or green pepper, or pimento.)

Nutted Wild Rice Salad

1 cup raw wild rice 5½ cup water 1 cup pecan halves 1 cup yellow raisins 1 orange grated rind 4 green onions thinly sliced ¼ cup olive oil ⅓ cup orange juice 1⅓ tsp salt ground black pepper
Put rice in strainer and run cold water, rinse and repeat
Place rice in a medium-sized heavy saucepan. Add water and bring to a boil. Adjust heat to a gentle simmer and cook uncovered 45 minutes. After 30 minutes check for doneness (not too soft). Place a thin towel (or cheesecloth) in a colander, turn rice into and drain. Transfer rice to bowl.
Add remaining ingredients to the rice and gently toss. Adjust seasonings to taste. Let mixture stand for 2 hours and allow flavors to develop.
Serve at room temperature.
