Oat-Bran Muffins

- 2½ cup oat-bran uncooked
- ¼ cup chopped nuts
- ¼ cup raisins
- 2 tsp baking powder
- ½ tsp salt optional
- ¾ cup skimmed milk
- ⅓ cup honey
- 2 eggs beaten
- 2 tbsp vegetable oil
Mix in a large bowl the oat-bran, nuts, raisins, baking powder & salt.
Add the milk, honey, eggs and vegetable oil.
Mix until moistened.
Fill almost full in greased or paper-lined tins.
Bake 15-17 minutes (or until golden brown) in a 425° oven.
Serve warm.
BLUEBERRY MUFFINS

- 2 cups sifted flour
- 4 teaspoons baking powder
- ¾ cup sugar
- 1 teaspoon salt
- 1 cup fresh frozen or canned blueberries (drained if using canned)
- 2 eggs
- ½ cup melted butter (do not substitute margarine or shortening)
- 1 cup milk
Put paper muffin-cup liners in 12 to 14 muffin cups.
Preheat oven to 400 degrees.
Sift all dry ingredients together in a large bowl.
Add the blueberries and mix until well-coated. (It is not necessary to completely thaw frozen blueberries.)
Beat the eggs well in a small bowl.
Add the melted butter and milk.
Quickly stir the liquid mixture into the dry mixture.
Do not over mix, because the mixture will become tough.
Fill muffin cups 3/4 full and sprinkle with cinnamon-and-sugar topping.
Bake in preheated oven 20 minutes or until brown.

- 1/2 Cup Butter
- 1/2 Cup Brown sugar Firmly packed
- 1 1/2 Cup Applesauce
- 1/4 Cup Milk
- 1 Tsp Vanilla
- 2 Eggs
- 2 Cups Flour
- 1 Tsp Baking powder
- 1 Tsp Baking soda
- 1/4 Tsp Salt
- 1 Cup Chopped walnuts (Optional)
- 1 Cup Grated apple
- 1/2 Cup Raisins (Optional)
Heat oven to 350 F
Grease or line 12 muffin cups.
In large bowl beat butter and brown sugar until fluffy.
Add applesauce, milk, vanilla, and eggs, blend well.
Stir in already blended flour, baking powder baking soda, and salt.
Blend until just moistened.
Stir in walnuts, apple, and raisins.
Fill muffin cups.
Bake at 375 F for 20-25 minutes.
Cool 5 minutes, remove from pan.
