South Buffalo Cake (who knew that there was a cake specific to South Buffalo?)

Today in things I had not heard of until today- the South Buffalo Cake. Who knew that there was a cake named after a neighborhood here in the 716. I don’t know what makes this particular cake so special to South Buffalo (to play along with stereotypes there is nothing Irish about it). I was only able to find two other hits with the name of this recipe- one (with a chocolate glaze) was on another recipe website and the other was someone asking about it.

One of the key things to remember when doing baking is to use the correct type of flour for the recipe. Cake flour (which is what is called for in this recipe) has a lower protein content (10%) than all-purpose (King Arthur is 11.7%) and bread flour (King Arthur is 12.7%)

South Buffalo Cake

Ingredients

  • 5 eggs
  • 2 cups sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 cups cake flour
  • 1 cup water
  • 1 tsp vanilla

Instructions

  • Separate eggs.
  • Beat whites until stiff and fine grained, then gradually beat in 1 cup sugar.
  • Beat yolks until very light and to yolks add the second cup of sugar and the vanilla.
  • Sift flour, baking powder, and salt, add to yolks alternatively with the water, continue to beat.
  • Fold in egg whites and mix carefully.
  • Pour into ungreased cake pan.
  • Bake in a 350° oven for about 1 hour, then turn heat off and continue to bake for about 15 minutes more.
  • Remove from oven, invert and let hang until nearly cool, then loosen and pull from pan.

Ingredients

Cookie Layer

  • ½ cup Melted butter
  • 1 Cup Granulated sugar
  • 1 Cup flour

Top Layer

  • 2 Eggs Well beaten
  • 2 Tbsp Lemon juice
  • 1 Lemon Grated rind
  • 2 Tbsp Flour
  • ¼ Cup Powdered sugar

Instructions

  • Combine butter, sugar and 1 cup flour in 8”x8” pan
  • Press flat and bake for 10 minutes at 350°
  • Mix and pour remaining ingredients on top of first mixture and back at 350° for 20 minutes.
  • Sprinkle powdered sugar on top of bars.

Turkey Dressing for 4-6 people or 100-125

Ingredients

For 4-6 servings

  • 4 Cups Dry bread crumbs
  • 2 Eggs
  • 1 Cup Diced celery
  • 1 Small Onion Chopped fine
  • 1 Tsp Poultry Seasoning
  • 1 Tsp Salt
  • ¼ tsp Pepper
  • 1 Stick Butter (½ cup)
  • 1 Cup Chicken stock Hot

100 to 125 servings

  • 12 Loaves Bread shredded (21 oz loaves)
  • 24 Eggs
  • 12 Cups Diced celery
  • 4 Lbs Onions
  • 14 Tsp Poultry seasoning
  • 14 Tsp Salt
  • 6 Tsp Pepper
  • 14 Sticks Melted butter or margarine (7 cups)
  • Chicken stock

Instructions

  • Use enough stock to really moisten the bread mixture. When you think you have it moist enough, put in more stock. I really takes a great deal of moisture not to have a too dry dressing.
  • If you don’t have a bowl large enough to mix the whole recipe, shred 6 loaves into one bowl and 6 in another. Divide the celery and onions and proceed to mix two batches and then combine them in a large electric roaster for the long slow cook.
  • If you do not have an electric roaster, put it in pans and bake in the oven. Just be sure in advance that you have enough oven space.

Ingredients

Batter

  • 2 cups sifted flour
  • 3 tsp baking powder
  • ½ cup soft butter
  • ½ cup sugar
  • 2 eggs
  • ¾ cup milk
  • 2 cups blueberries washed and drained
  • ½ tsp salt

Topping

  • cup flour
  • ¼ cup butter
  • ¾ cup brown sugar
  • 2 tsp cinnamon

Instructions

  • Preheat oven to 375°.
  • Grease a 9"x9"x2" pan.
  • Sift flour, baking powder, and salt.
  • In a large bowl combine butter, sugar, eggs; beat at high speed with electric beater until fluffy.
  • At low speed, add dry ingredients alternately with milk.
  • Fold in blueberries.
  • Turn in prepared pan and sprinkle with combined topping ingredients.
  • Bake 35 minutes or until done.

Apple Topped Coffee Cake

Ingredients

Coffee Cake

  • ¾ cup sugar
  • 4 tbsp. butter
  • ½ cup milk
  • cup flour
  • 2 tsp baking powder
  • ½ tsp salt

Topping

  • sliced apples
  • 4 tbsp. brown or white sugar
  • 1 tbsp. flour
  • 1 tsp cinnamon
  • 1 tbsp. melted butter
  • chopped nuts optional

Instructions

  • Cream sugar and butter together.
  • Add egg and mix thoroughly.
  • Stir in the milk, then add the sifted dry ingredients.
  • Spread batter in greased, oblong baking dish or pan.
  • Arrange apple slices on top of batter, pressing them slightly into the batter.
  • Then sprinkle top with a mixture of the sugar, flour, cinnamon, melted butter, and (optional) chopped nuts.
  • Bake about 30 minutes in a 375° oven.
  • Serve warm with butter
