Violet Kozel’s Grandma’s Swedish Coffee Cake

Ingredients

  • 1 large square yeast
  • 1/2 cup water lukewarm
  • 3 Tbsp butter
  • 1/8 tsp salt
  • 3/4 cup sugar
  • 1 cup milk scalded
  • 2 eggs beaten
  • 15 cardamon seeds ground fine
  • 4-4 1/2 cup flour sifted
  • butter melted
  • sugar
  • Cinnamon

Instructions

  • Dissolve yeast in water.
  • Set aside
  • Mix together butter, salt, sugar and scaled milk.
  • Let cool.
  • To the cool milk mixture add yeast, 2 beaten eggs, the cardamon seeds, & sifted flour.
  • Knead on floured board.
  • Let rise to top of bowl in warm place, about 2 hours.
  • Braid and shape into tearings or strips.
  • Place in greased baking tins for 25-30 minutes, on warm place, to allow to raise again.
  • Brush with melted butter, cinnamon, and sugar.
  • Bake 30-35 minutes at 350 degrees.
  • Makes two coffee cakes

Ingredients

Batter

  • 2 cups sifted flour
  • 3 tsp baking powder
  • ½ cup soft butter
  • ½ cup sugar
  • 2 eggs
  • ¾ cup milk
  • 2 cups blueberries washed and drained
  • ½ tsp salt

Topping

  • cup flour
  • ¼ cup butter
  • ¾ cup brown sugar
  • 2 tsp cinnamon

Instructions

  • Preheat oven to 375°.
  • Grease a 9"x9"x2" pan.
  • Sift flour, baking powder, and salt.
  • In a large bowl combine butter, sugar, eggs; beat at high speed with electric beater until fluffy.
  • At low speed, add dry ingredients alternately with milk.
  • Fold in blueberries.
  • Turn in prepared pan and sprinkle with combined topping ingredients.
  • Bake 35 minutes or until done.

Ingredients

Coffee Cake

  • ¾ cup sugar
  • 4 tbsp. butter
  • ½ cup milk
  • cup flour
  • 2 tsp baking powder
  • ½ tsp salt

Topping

  • sliced apples
  • 4 tbsp. brown or white sugar
  • 1 tbsp. flour
  • 1 tsp cinnamon
  • 1 tbsp. melted butter
  • chopped nuts optional

Instructions

  • Cream sugar and butter together.
  • Add egg and mix thoroughly.
  • Stir in the milk, then add the sifted dry ingredients.
  • Spread batter in greased, oblong baking dish or pan.
  • Arrange apple slices on top of batter, pressing them slightly into the batter.
  • Then sprinkle top with a mixture of the sugar, flour, cinnamon, melted butter, and (optional) chopped nuts.
  • Bake about 30 minutes in a 375° oven.
  • Serve warm with butter

Dutch Coffee Cake

Ingredients

  • cups flour
  • 1 cup sugar
  • 3 tsp baking powder
  • ¼ tsp salt
  • nutmeg
  • cinnamon
  • brown sugar
  • 1 tsp lard
  • ¾ cup raisins
  • 1 egg
  • 1 cup milk

Instructions

  • Sift together dry ingredients 4 times.
  • Into this rub 1 tsp of butter and 1 of lard.
  • Take out a little for crumbs on top.
  • Add raisins and 1 egg in a cup filled with milk.
  • Mix well.
  • Put in a pan.
  • Sprinkle with crumbs, cinnamon, and brown sugar
  • Bake in a moderate (350°-400°) oven for about 35 minutes
