POLISH DOUGHNUTS (Paczki)

Ingredients

  • 1/2 cup milk
  • 1/4 cup unsalted butter
  • 1/3 cup confectioners sugar
  • 1 package active dry yeast
  • 21/4 cups flour
  • 4 egg yolks from large eggs
  • 1/2 teaspoon grated orange rind
  • 1/2 teaspoon grated lemon rind
  • 3 tablespoons orange juice
  • 1/4 teaspoon pure vanilla extract
  • Grape jam
  • Oil for deep frying
  • Extra confectioners’ sugar

Instructions

  • In a small saucepan heat the milk until tiny bubbles appear around the edge; add butter and 1/3rd cup sugar; of heat stir until butter melts.
  • Pour into a medium mixing bowl and cool to lukewarm (115 degrees); add yeast and stir until dissolved— this takes considerable stirring. Add 1 cup of the flour, the egg yolks. orange rind, lemon rind, orange juice and vanilla; with a wooden spoon beat until blended.
  • Stir in enough more flour to make a soft dough.
  • On a lightly floured surface, knead until smooth and elastic -- about 5 minutes.
  • Place in a greased medium mixing bow; turn to grease top.
  • Sprinkle lightly with flour.
  • Cover; let rise in a warm, draft-free place until doubled —about 1 hour.
  • Punch-down dough; cut into 2 equal portions.
  • On a prepared pastry cloth with a prepared fabric-covered rolling pin roll out 1 portion of. the dough-so it is 1/2" thick.
  • With'a round 2 3/4-inch cutter cut out.
  • Roll and cut the remaining portion as the dough the same way.
  • With your forefinger, make a 1-inch-long indentation in the center of each round.
  • Put 1/2 level teaspoon jam in each indentation.
  • Holding a round in the palm of one hand. with the thumb and forefinger of the other hand lift up edges and pinch together hard so they meet; turn over edge, a little at a time, pinching hard as you do so, to insure a tight seal; with your forefinger held like a knife, firmly press down edge.
  • The rounds should now be oval shape.
  • Place‘ sealed greased cookie sheet; cover and let rise in a warm, draft-free place until doubled- about1 hour.
  • Fry in deep hot oil (375 degrees on a frying thermometer) without touching or crowding).until well browned on bottom
  • side — about 2 minutes; turn and continue frying until top side is well browned - about 2 minutes more;
  • Doughnuts should be a dark brown to ensure doneness.
  • Drain on absorbent paper.
  • With extra confectioners sugar mashed through a sieve dust doughnuts on all sides.
  • Serve at once.

This is where I am supposed to be writing a novel about nothing that has to do with the recipe. It’s because the way google works is that people who write about whatever gets ranked higher in the Google algorithm (wow- I managed to get the right the first time I tried to type it out). Feel free to just jump to the recipe (since that’s all I ever do when Pinteresting recipes- you would think that with the hundreds of cookbooks I own that I would not be doing that- but I do).

PEPPAKAKER (Swedish Gingersnaps)

Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 1/2 cup molasses
  • 1 tablespoon ginger
  • 2 teaspoons cinnamon
  • 2 teaspoons cloves
  • 1 teaspoon baking soda
  • 3 1/2 cups flour

Instructions

  • Work butter until creamy.
  • Add sugar, molasses, spices, baking soda and flour.
  • Turn onto a floured board and knead until smooth.
  • Shape into rolls, wrap in waxed paper and chill several hours or overnight.
  • This dough may be rolled thin and cut with fancy cookie cutters.
  • Place on a greased cookie sheet and bake.
  • Temp. 325°
  • Time: 8-10 minutes
  • Yield: 8 dozen

Ingredients

  • 1/3 cup anise seeds
  • 3 2/3 cups all purpose flour sifted
  • 1/2 tsp baking soda
  • 1 cup butter softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 1 egg
  • 3 tbsp light molasses
  • 1/2 cup undiluted evaporated milk

Instructions

  • With a sharp knife, chop anise seeds very fine.
  • Sift flour with baking soda. 
  • Cream butter until light and fluffy, gradually adding sugars.
  • Stir in eggs, molasses, milk, chopped anise seeds; beat well.
  • Blend in flour mixture.
  • Refrigerate, covered 1 hour.
  • Shape into rolls 1 1/4" diameter.
  • Refrigerate at least 12 hours.
  • Preheat oven to 375º F. 
  • Slice dough 1/8" to 1/4" thick.
  • On ungreased cookie sheets, bake 9-11 minutes or until done.

Ingredients

  • 3 Cups Chicken Cooked
  • 1 1/2 Cups Ham Cooked and cubed or bite size
  • 1/2 Cup Green pepper Chopped
  • 1 Small jar Red pimentos
  • 2 Cans Condensed cream of mushroom soup
  • 1 Can Condensed Cream of celery soup
  • 6 oz Can Mushrooms Pieces undrained
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper

Instructions

  • Sauté chopped green pepper in butter for about 6 minutes.
  • Add soup (condensed), mushrooms, and pimentos.
  • In a 2-qt casserole or larger, combine all the ingredients. If it appears too thick, add a little milk.
  • Place in a 350 degree oven for 45 minutes to 1 hour or until bubbling and slightly brown on the edge. Garnish with green pepper rings and serve with croutons

Croutons

  • Estimate 2 slices of bread per person. Toast 12 or more slices of white bread in broiler until golden brown. Remove from oven and cut into cubes. Place in separate dish for buffet serving.

Potato Pancakes

 

Potato Pancakes (Latke)

Ingredients

  • 1 1/2 lbs potatoes
  • 1 tsp grated onion (optional)
  • 2 eggs well beaten
  • 1 tbsp all purpose flour
  • 1 tbsp bread crumbs
  • 1 tsp salt
  • pepper

Instructions

  • Peel potatoes and let stand in cold water for an hour or two.
  • Dry potatoes and grate. Add eggs, flour, crumbs, salt, and pepper.
  • Heat oil in skillet. Potato pancakes require more fat/ oil than other pancakes. If using an electric skillet heat to a temperature of 420º.
  • After spooning each pancake into frying pan press gently with the back of a spoon to make it thin and even. Fry until they are crisp and well browned. 
  • Drain pancakes for a minute on several thicknesses of paper towels. 
  • Serve with sour cream.
  • Pancakes can be kept warm or reheated in a 350º oven.

Notes

Use half Idaho baking potatoes and half red potatoes. California and Ohio potatoes can be used alone.
