Spooned Tuna Cake

  • 1 qt mashed potatoes
  • 3 cans Chunks & Flakes or Fancy Tuna
  • 6 eggs
  • Pinch of nutmeg
  • Salt
  • pepper
  1. Mix egg yolks with potato, and mix with drained tuna.
  2. Whip whites of eggs stiff and fold gently into mixture; do not whip.
  3. Season.
  4. Dip mixture with a large spoon, drop info deep fat at frying temperature.
  5. When cakes are puffed and brown, drain and serve.
