Christmas Rocks

Course Dessert

Ingredients

  • 1 1/2 Cups Sugar
  • 1 Cup Butter
  • 3 Cups Flour
  • 1 Cup Candied pineapple
  • 1 Cup Dates
  • 1 Tbsp Cocoa
  • 1 Pound Pecans (Or 1/2 lb walnuts & 1/2 lb pecans)
  • 3 Eggs
  • 1 Tbsp Dark coffee
  • 1 Cup Red candied cherries
  • 1 Cup Green candied cherries
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Ginger
  • 1/2 Tsp Allspice
  • 1/2 Tsp Nutmeg
  • 3/4 Tsp Soda

Instructions

  • Cream Butter and sugar. Add eggs and coffee. Mix well.
  • Add flour, cocoa, spices and soda
  • Mix in fruits and nuts.
  • Bake at 325 degrees for 15-18 minutes or until golden brown.
