Strawberry Surprise Pie

- 1 9" baked pie shell
- 1 pkg vanilla pudding mix
- 1 quart strawberries
- 1 cup sugar
- 1⅓ cups water
- 3 tablespoons cornstarch
Make and bake pie shell, using packaged pie crust mix.
Cool.
Prepare pudding mix as directed on the package.
Cool slightly; pour into pie shell.
Chill.
Wash strawberries; hull.
Simmer 1 cup strawberries, 1 cup sugar, and 1 cup water 15 minutes.
Mix remaining ⅓ cup water with cornstarch; add to cooked strawberries.
Cook until thick, stirring constantly; cool.
Add uncooked berries.
Spoon over pudding mixture in pie shell.
Chill 3 to 4 hours.
Yield: 1 9-inch pie.

Orange Meringue Pie

Filling
- ½ cup cornstarch
- 1 ½ cups sugar
- 3 egg yolks
- 1 can 6 ounces frozen orange juice concentrate, thawed
- 1 ½ cups water
- 2 tablespoons butter or margarine
- 1 baked 9-inch pie shell
Combine cornstarch and 1 cup of the sugar in saucepan.
Stir in egg yolks, thawed orange juice concentrate and water.
Cook over low heat, stirring constantly, until smooth and thick.
Add butter and stir until melted.
Cool slightly.
Pour into baked pie shell.
Beat egg whites until stiff.
Gradually beat in the remaining 1/2 cup sugar, a tablespoon, at a time.
Beat until stiff and glossy.
Spread meringue over filling, sealing meringue to pie shell.
Bake in a hot oven (400 degrees Fahrenheit) for 5 minutes, or until lightly browned.
Cool before cutting into wedges and serving.

- 1 1/2 cups granulated sugar
- 1 cup flour
- 1/2 tsp salt
- 2 tsp baking powder
- 2 eggs beaten
- 1 tsp vanilla
- 1 cup apples diced
- 1 cup nuts chopped
Beat the eggs well.
Add sugar and the flour which has had baking powder and salt sifted in it.
Add vanilla, apples, and nuts
Spread onto two 9” greased pie tins.
Bake 30 minutes at 350.
Cut in wedges and serve with ice cream or whipped cream.

Sweden House Fudge Pie

- 1 cup butter
- 2 ½ cup powdered sugar
- 3 eggs
- 2 ½ squares bitter chocolate
- 2 ½ oz pecan meats
- 1 graham cracker crust pie shell
Combine butter, sugar, and eggs.
Beat till light and fluffy.
Melt chocolate.
Fold in and add nuts.
Pour into shell.
Freeze,
Shred chocolate curls on top.
