Rye Bread

I would have photos of the final product of the rye bread I made but it got ate up really really fast.

Rye Bread

Ingredients

  • cup warm water
  • 1 pkg yeast` (2 ¼ tsp if using jarred)
  • 1 tbsp butter
  • 2 tsp salt
  • 1 tbsp caraway seeds
  • 2 tbsp brown sugar
  • 1 cup rye flour
  • cup White flour

Instructions

  • Mix all ingredients except white flour with an electric mixer
  • Mix in white flour

  • Let rise until double.
  • Spoon into 2 greased bread pans.
  • Rise until double
  • Bake at 375° for 40-45 minutes

Boston Brown Bread (aka Steamed Brown Bread)

 

STEAMED BROWN BREAD

Equipment

  • 1 lb coffee cans

Ingredients

  • 1 cup cornmeal
  • 1 cup whole wheat flour
  • 1 cup white flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon soda
  • ¾ cup dark molasses
  • 2 cups buttermilk or sour milk
  • 1 cup raisins

Instructions

  • Add cornmeal and whole wheat flour to white flour, salt, baking powder, and soda.
  • Add molasses, buttermilk, and raisins.
  • Beat thoroughly.
  • Half-fill 3 greased 1-pound coffee cans.
  • Cover tightly with foil and steam 3 hours on a rack in a covered pan, using only a small amount of boiling water (no more than one-fourth up the sides).
  • Replace water as necessary.
  • Remove cover and place in a 450-degree oven for 5 minutes before removing from the can.

BEAUMONT WHOLE WHEAT BREAD

Ingredients

  • 1 pkg. dry yeast
  • ½ cup. warm water [110-115 degrees]
  • ½ cup milk
  • 2 Tbsp. brown sugar
  • 1 Tbsp. molasses
  • 1½-2 cup. enriched white flour
  • 1 tsp. salt
  • 1 cup whole wheat flour

Instructions

  • Dissolve yeast In warm water.
  • Add milk. brown sugar, molasses, salt and whole wheat Flour.
  • Beat well.
  • Add half of white flour and continue to beat untll smooth.
  • Gradually add remaining flour just until a soft dough is formed.
  • Let rest 5 minutes.
  • Knead 5-8 minutes.
  • Place in lightly greased bowl. turning to grease entire surface.
  • Cover.
  • Let rise until doubled.
  • Punch down.
  • Let rest and then shape into a loaf.
  • Place in lightly greased loaf pan.
  • Let rise until almost doubled.
  • Bake at 375° for 45 minutes.
  • Remove from pan and cool on wire rack.

Decorated with eggs and crosses, this golden sweet bread from the Azores is served with coffee or sweet wine for dessert on Easter Sunday.

Ingredients

  • 1 pkg. active dry yeast
  • ½ cup lukewarm water
  • 1 tsp. sugar
  • cup flour
  • 3 eggs
  • 1 cup sugar
  • 1 tsp. nutmeg
  • ½ tsp. salt
  • 4 tsp. grated lemon peel
  • stick melted sweet butter
  • ¼ cup lukewarm milk
  • 3½-4 cups flour
  • Egg Glaze
  • 1-6 hard cooked eggs

Instructions

  • Dissolve yeast, water, sugar. and flour in a bowl and mix well.
  • Let stand until frothy.
  • Have eggs at room temperature or warm them in very warm water. Beat eggs until thick and lemon-colored. Gradually add sugar and beat well.
  • Add nutmeg, lemon, salt [omit if using salted butter], and yeast mixture.
  • Gradually add 2 cups flour and beat 5 minutes with electric mixer. Gradually add remaining flour, alternating with melted butter and milk to make a soft dough.
  • Turn out onto well-floured board and knead until smooth and elastic (5-10 minutes).
  • Add only enough flour to prevent dough from sticking.
  • Place in greased bowl, turning to grease top of dough.
  • Cover with kitchen towel and set in warm place until doubled in bulk (2-3 hours).
  • Punch down and knead gently on floured board.
  • Dough makes 1 large loaf or 6 individual loaves.

Large Loaf instructions

  • For large loaf, grease 9" cake pan. spring form pan, or oven-proof skillet.
  • Reserve 1 small piece of dough for decurative cross.
  • Place dough in pan and pat down.
  • Lay plain, hard-cooked egg in center (do not press in).
  • Roll pencil-thin strip dough and place in circle around egg to secure.
  • For decorative cross, roll two pencil thin strips of dough 9" long.
  • Lay stripes in a cross (X) over top of loaf, criss-crossing over top of egg.
  • Tuck ends under loaf.
  • For variation, lay 4 eggs between arms of cross.
  • Roll pencil-thin strips of dough 6 inches long to form crosses (X) over each egg to secure.
  • Press ends of strips into loaf beside each egg.
  • Cover and let rise in warm place until almost doubled in size (2- 2 ½ hours)
  • Do not rush.
  • Brush with 1 egg beaten with l tbsp. water.
  • Bake at 325“ 1 hour or until hollow-sounding when tapped.
  • Cool on wire rack.
  • Serve with sweet butter.

Small breads

  • For small individual breads, divide dough into 7 equal parts, reserving 1 part for decoration.
  • Form 6 round buns of equal size and place on greased baking sheet, 3-4" apart.
  • Flatten slightly.
  • Gently lay plain, hard-cooked egg in center of each bun (do not press in).
  • With remaining dough, roll 12 pencil-thin strips, 6" long.
  • Form 1 cross {X} over each egg.
  • Gently tuck ends of strips under loaf.
  • Cover and let rise until doubled in size (2-2 ½ hours).
  • Don't rush. Brush with 1 egg beaten with tbsp. water.
  • Bake at 325° 30-35 minutes or until hollow-sounding when tapped.
  • Cool on wire rack.
  • Serve with sweet butter.

  • 3 cups Bisquicktm
  • 1 tbsp sugar

Instructions

  • Heat oven to 350°.
  • Mix ingredients in a large bowl.
  • Fill greased muffin tin ½ full.
