Strawberry Surprise Pie
Ingredients
- 1 9" baked pie shell
- 1 pkg vanilla pudding mix
- 1 quart strawberries
- 1 cup sugar
- 1⅓ cups water
- 3 tablespoons cornstarch
Instructions
- Make and bake pie shell, using packaged pie crust mix.
- Cool.
- Prepare pudding mix as directed on the package.
- Cool slightly; pour into pie shell.
- Chill.
- Wash strawberries; hull.
- Simmer 1 cup strawberries, 1 cup sugar, and 1 cup water 15 minutes.
- Mix remaining ⅓ cup water with cornstarch; add to cooked strawberries.
- Cook until thick, stirring constantly; cool.
- Add uncooked berries.
- Spoon over pudding mixture in pie shell.
- Chill 3 to 4 hours.
- Yield: 1 9-inch pie.
