Bulgarian Meatball Soup
Servings 4
Ingredients
- 1½ lb ground beef
- 2 small onions minced
- 2 tsp dill weed
- 4 eggs
- 2 cloves garlic crushed
- 2 tsp salt
- ½ tsp black pepper
- flour
- 12 cups beef broth
- ⅔ cup rice uncooked
- 1 lemon (juice of)
- 4 tbsp fresh dill
Instructions
- Mix 1½ lb ground beef, 2 small onions, 2 tsp dill weed, 4 eggs, 2 cloves garlic, 2 tsp salt,½ tsp black pepper in large bowl
- Form small balls and roll them in the flour
- Drop meatballs in boiling 12 cups beef broth
- Add the ⅔ cup rice, lower heat and cook about ½ hour
- Add lemon Juice and additional dill.
- Top with a tablespoon of yogurt or sour cream
