Bulgarian Meatball Soup

Ingredients

  • lb ground beef
  • 2 small onions minced
  • 2 tsp dill weed
  • 4 eggs
  • 2 cloves garlic crushed
  • 2 tsp salt
  • ½ tsp black pepper
  • flour
  • 12 cups beef broth
  • cup rice uncooked
  • 1 lemon (juice of)
  • 4 tbsp fresh dill

Instructions

  • Mix 1½ lb ground beef, 2 small onions, 2 tsp dill weed, 4 eggs, 2 cloves garlic, 2 tsp salt,½ tsp black pepper in large bowl
  • Form small balls and roll them in the flour
  • Drop meatballs in boiling 12 cups beef broth
  • Add the ⅔ cup rice, lower heat and cook about ½ hour
  • Add lemon Juice and additional dill.
  • Top with a tablespoon of yogurt or sour cream
